- In a large pot, cook bacon over medium heat until slightly crispy.
- Add chopped onion and sauté until soft and fragrant.
- Stir in garlic and cook for 1 minute.
- Add collard greens a handful at a time, letting them wilt down.
- Pour in chicken broth, add sugar, red pepper flakes, vinegar, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer 45–60 minutes until greens are tender and flavorful.
- Adjust seasoning and serve with cornbread.
