Southern Collard Greens

These collard greens cook low and slow until they’re tender and full of flavor. It’s the kind of recipe that warms the kitchen and tastes even better the next day. A must-have for any holiday spread.

Ingredients
  

  • 2 lbs fresh collard greens washed and cut
  • 4 –5 slices thick-cut bacon or smoked turkey
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 4 cups chicken broth
  • 1 tbsp sugar optional, balances bitterness
  • 1 tsp crushed red pepper flakes
  • 1 tbsp apple cider vinegar
  • Salt & pepper to taste

Method
 

  1. In a large pot, cook bacon over medium heat until slightly crispy.
  2. Add chopped onion and sauté until soft and fragrant.
  3. Stir in garlic and cook for 1 minute.
  4. Add collard greens a handful at a time, letting them wilt down.
  5. Pour in chicken broth, add sugar, red pepper flakes, vinegar, salt, and pepper.
  6. Bring to a boil, then reduce heat to low.
  7. Cover and simmer 45–60 minutes until greens are tender and flavorful.
  8. Adjust seasoning and serve with cornbread.
