Method
- Preheat oven to 350°F and lightly butter your baking dish.
- Cook macaroni until al dente, then drain.
- In a bowl, whisk evaporated milk, whole milk, eggs, melted butter, salt, pepper, paprika, and garlic powder.
- Add cooked macaroni and stir in both cheddar cheeses.
- Pour everything into the baking dish.
- Sprinkle Colby Jack on top if using.
- Bake 30–35 minutes, or until the top is golden and edges are bubbly.
- Let cool slightly so it sets, then serve warm.
