Holiday Cranberry Salad

A bright, sweet, chilled cranberry side dish made with cranberry sauce, gelatin, and fruit — refreshing, festive, and so easy.

Ingredients
  

  • 1 3 oz package raspberry or cranberry Jell-O
  • 1 cup boiling water
  • 1 14 oz can whole berry cranberry sauce
  • 1 cup crushed pineapple drained
  • ½ cup chopped pecans optional
  • ½ cup cold water
  • 1 Tbsp lemon juice brightens the flavor

Method
 

  1. In a medium bowl, dissolve Jell-O in 1 cup boiling water.
  2. Stir in cranberry sauce until mostly smooth.
  3. Add crushed pineapple, cold water, lemon juice, and pecans (if using).
  4. Mix well and pour into a bowl or serving dish.
  5. Cover and refrigerate for at least 4 hours, or until fully set.
  6. Scoop to serve. Keep chilled.
