Ingredients
  

  • 2 cups elbow macaroni uncooked
  • 2 cups sharp cheddar cheese shredded
  • 1 cup mild cheddar cheese shredded
  • 1 cup evaporated milk
  • 1 cup whole milk
  • 2 large eggs
  • 4 tbsp butter melted
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ½ cup shredded Colby Jack optional, for topping

Method
 

  1. Preheat oven to 350°F and lightly butter your baking dish.
  2. Cook macaroni until al dente, then drain.
  3. In a bowl, whisk evaporated milk, whole milk, eggs, melted butter, salt, pepper, paprika, and garlic powder.
  4. Add cooked macaroni and stir in both cheddar cheeses.
  5. Pour everything into the baking dish.
  6. Sprinkle Colby Jack on top if using.
  7. Bake 30–35 minutes, or until the top is golden and edges are bubbly.
  8. Let cool slightly so it sets, then serve warm.
